
I have been craving a big ol' Egg Salad Sandwich, so this morning I got up and googled some recipes....I know I should use healthy mayo but I am not gonna today...I am going to be bad and use good ol'fashion fat mayo...

I am gonna try this recipe and thought I would share it with you. I found it on Moms who think
Satisfaction can be found in a great egg salad recipe. There is nothing more satisfying or filling than an egg salad sandwich. Sure everyone moves away from you in the lunchroom, but secretly they all want a bite.
This recipe is your basic egg salad recipe. Everyone has their own favorite additions. Some suggestions are olives, a slice of tomato, pickles, fresh or dried dill…whatever yours is, throw it in and enjoy.

Ingredients:
1/2 cup mayonnaise
1 teaspoon dried minced onion
1/4 teaspoon salt
1/4 teaspoon pepper
6 hard-cooked eggs,chopped
1/2 cup finely chopped celery
lettuce leaves or bread
Directions:
1. In a bowl, combine mayonnaise, onion, salt and pepper.
2. Stir in eggs and celery. Cover and chill.
3. For each serving, spoon about 1/2 cup onto a lettuce leaf or spread on bread.
So on a differnt note while my eggs are boiling and I am typing can you believe its gonna be Easter already...I Smell the Easter Bunny.....How fast did that creep up...Are you ready? I need to get a basket and fill with some goodies for my son. He is loving the bubble gums right now. My Big birthday is this friday, yep on Good Friday...I am gonna be 35 years old. I remember being young and thinkn my parents were so old and they were in there 30's. Bite my toungue, what was I thinking. (lol)
